Make Ahead Egg Muffin Sandwiches

Labour Day has come and gone, the kids are back to school and we working parents are settling into a regular routine. And do you know what saved our morning? These make ahead egg muffin sandwiches I prepped over the weekend!

This is my third batch now and won't be the last. Our first batch went fast because all four of us loved the novelty of making these McDonald's inspired breakfasts. We overdid it and ate them every single morning for a week. We took a week as a break and now we use them as they are intended, not for every day but rather for busy mornings when we just don't have a chance to sit down with a healthy breakfast option. 

Pre-Covid my Sunday would be filled with errands. So much so that our family didn't have time for our all important Sunday meals. Once we realized that lockdown was going to last, we replaced all that running around outside of the house for spending time in the kitchen. While there are some aspects of life that I can't wait until it gets back to normal (hello travel!) I am sure thankful we've had this time to slow down and spend more quality time with family. 

A single batch of these make ahead egg muffin sandwiches will yield 12 individual sandwiches and takes about 30 minutes to prep, an hour or so to cool, and another 30 minutes to assemble and package. I like to start them an hour before I start prepping dinner. While I wait for the ingredients to cool, I get dinner in the oven. Once that's done, I assemble and pack and then freeze. What I like about this system the most is you get all the cooking done at once, which means you only have to clean the kitchen once when you're done! As much as I like having a clean kitchen, I don't want to be constantly cleaning it. 

Make Ahead Egg Muffin Sandwiches



Ingredients:


12 eggs, the fresher the better!
2 tablespoons milk
Salt and pepper
12 cooked sausage patties (you could also use ham or bacon)
12 english muffins
12 slices cheddar cheese 

Make Ahead Egg Muffin Sandwiches


To Make:


Preheat the oven to 325 degrees

Grease a 9x13 pan with cooking spray

Crack open all 12 eggs. Open eggs one at a time into a small bowl and pour each one into larger bowl Using a standing mixer, whisk eggs, milk, salt and pepper until mixture resembles raw scrambled eggs

Pour the egg mixture into the greased pan and bake for 22 minutes. Centre should be set. Test by moving the pan quickly, if there is minimal jiggle, the eggs are ready. Keep a watch in the last few minutes, you don't want to overcook your eggs.

Remove and cool completely, about 30-45 minutes, before cutting into 12 equal squares.

While the eggs are cooling, cook your sausage patties (or ham/bacon) set aside. 

Cut each english muffin in half and place on a baking sheet. Toast in the pre-heated oven for a few minutes. Leave to cool on the baking sheet. 

Make Ahead Egg Muffin Sandwiches



To assemble your sandwiches top half of an english muffin with egg, cheese, meat, and the other half of the muffin. Another option is to spread a little butter on each english muffin while cooling. 

Wrap each sandwich with waxed paper and stack in a freezer bag. Place in freezer. 



To Serve:


The night before, take a frozen sandwich and leave in the fridge. The next morning, remove waxed paper and place on a paper towel on a plate. Microwave for 1 minute, flip and microwave for 30 seconds.

These make ahead egg muffin sandwiches have made our mornings so much easier. Pop in the microwave while you're making coffee and you'll be out the door, or into your home office, in no time at all.
